Easter cupcakes recipe!

Hi there! Since it's nearly Easter and we're hopefully all taking some well-deserved rest from university, why not do some baking? Personally, I'm a bit of a better cook than I am a baker, but let me tell you, homemade cakes and cookies are way batter than the store-bought ones. That's why I decided to share this recipe for white chocolate cupcakes with strawberry cream. They're my favourite thing to bake, because they're easy, super pretty and just so delicious. I'm sure you'v got most of the ingredients at home already, so there isn't really much of an excuse not to bake some - and share with your loved ones.

Ingredients (for approximately 8 cupcakes)

For the dough (all in room temperature):

- 110g/4oz butter

- 110g/4oz flour

- 80g/3oz caster sugar

- 2 large eggs

- 1 teaspoon vanilla extract

- 1 teaspoon baking powder

- 50g white chocolate chips/chopped white chocolate

For the cream (all cold):

- 250g/9oz mascarpone

- 250ml/9fl double cream

- 3 strawberries

- 2 tablespoons powdered sugar

+ decorations of choice, paper muffin cases, muffin baking form

Directions

For the dough:

Preheat your oven to 170ºC/340ºF.

Using a hand mixer, mix sugar and butter together until you get a fluffy mixture. Add eggs, one by one, and mix further. Add vanilla extract and mix. Sift in the flour and your baking powder and carefully mix together using a spatula. Finally, add your white chocolate and mix.

Spoon the mixture into paper cases (put the paper cases inside the form first) until 2/3 full. Bake in the oven for 25 minutes (or until the cupcakes are pale golden-brown).

For the cream:

Combine mascarpone, cream and sugar in a bowl. Puree your strawberries in a separate bowl. Using a hand mixer, mix mascarpone with cream until you get a thick cream. Add your strawberries and mix until combined. Refrigerate.

Let your cupcakes cool on a wire rack. When they're room temperature, decorate them with your mascarpone cream. You can use whatever technique you want, I'm lazy and I just like to use a spoon to apply and then a spatula to smooth them out. All kinds of decorations will be handy + for an extra Easter touch you may want to use small chocolate eggs.
